Start by putting the peeled potatoes in the saucepan, add enough hot water to cover them, turn on the heat to high and let them cook for 15 minutes.
In a bowl, add the ground beef, the egg, the salt, the black pepper, parsley to taste and the wheat flour, mix all the ingredients together very well until combined.
Next, get a portion of this mixture in your hands and shape it into a flat meatball. Repeat this process with all the meat. I managed to make 5 portions here in this recipe.
Once you’ve done that and the potatoes have cooked through, remove them from the saucepan.
Cut off a small slice from one side of each potato and scoop a hole in their center using a spoon, just like shown in the video.
Once you’ve done that, transfer these potatoes to a round baking tray lined with nonstick baking paper and add a drizzle of olive oil to each potato.
Fill each hole with 25g of mozzarella cheese chopped into small cubes.
Top each potato with a portion of the meat balls we made and press gently.
Then top each of them with another drizzle of olive oil and finish by sprinkling 25g of grated mozzarella cheese over each meatball.
Take to a preheated oven at 180°C (356°F) and bake for 40 minutes.
Serve.
