Into a blender, add 1 diced apple with the skin on, the eggs, the oil and the sugar, blend it all together for 3 minutes.
Remove the skins from the two other apples and cut them into dices, add the squeezed lemon juice and the 2 tablespoons of sugar, mix it all together very well.
Transfer the mixture from the blender to a bowl, add the apple dices and the wheat flour through a sieve, to make the batter softer and smoother.
Grease a 22cm ring cake mold with butter and wheat flour.
Carefully pour the mixture around the mold and bake in a preheated oven at 200°C (392°F) for 60 to 70 minutes or until the toothpick comes out clean (with no batter stuck to it).
Let it cool down a bit then serve.
