Brazilian Peanut Candy

Place the peanuts in a food processor and process until the peanuts are well crushed, looking like a flour, add the sugar and the salt, process again until combined. If there's any sugar stuck to the sides or bottom, release it with a spoon or spatula and mix it all together very well again.Transfer the mixture to a bowl and with your hands, press and squeeze this mixture until the peanuts release enough oil for you to properly shape the peanut candies.Fill a small round cookie cutter with the peanut mixture and firmly press down on it with your fingers. Keep adding the mixture and pressing down on it. Make the top very flat, and with your finger, push the peanut mixture through the cookie cutter until released.Repeat this process until you've used up all the peanut mixture.Serve.

  • 500g of Roasted, Peeled and Unsalted Peanuts
  • 270g of Refined Sugar (About 1 ½ Cups)
  • 1/2 Level Teaspoon of Salt

Fill a small round cookie cutter with the peanut mixture and firmly press down on it with your fingers. Keep adding the mixture and pressing down on it. Make the top very flat, and with your finger, push the peanut mixture through the cookie cutter until released. 

Repeat this process until you've used up all the peanut mixture. 

Serve.
