Into a saucepan with about 4 cups of water, add the prewashed lentils, cover the pan, and let it all cook for 10 minutes.
After this indicated time, drain the lentil water, and set aside.
Now into a large saucepan over medium heat, add a drizzle of olive oil, add the bacon chopped into dices, and stir them very well until slightly browned.
Then add the smoked sausages chopped into dices and stir for another 2 minutes.
Add the medium onion chopped into thin strips, the crushed garlic cloves, mix it all together very well again until slightly browned.
Then add the red and yellow peppers chopped into dices, mix for another 2 minutes.
Add the white rice and mix.
Once you’ve done that, add the lentils we’ve set aside and mix well again.
Season it all with chimichurri and salt, then mix well.
Add hot water and gently mix it all.
Let it cook until the water dries up.
After that, turn off the heat, close the pan, and let it all rest for 5 minutes.
Top it with some parsley and chives to taste and help yourself.
