Cook the cassava and mash into a mixture.
In a pan, brown the bacon in its own grease, add onion and garlic, sauté. Add the pepper, the tomato, the chicken and mix very well. Add the paprika, the saffron, the salt and stir. Finally, add the tomato sauce and stir.
Into a bowl, add the chicken to the cassava mash. Use your hands to mix them together, add the cheese and mix very well again.
Rub some oil in your hands, get portions of this mixture, round them and shape as you wish.
Coat these balls in the wheat flour, then dip in the eggs, finally coat in the breadcrumbs.
Repeat this process with all the balls.
Fry in very hot oil. Don't fry too many snacks at once to prevent the oil temperature from dropping. Serve.
