Start by adding the egg yolks to the cooked rice, mix everything very well and set aside.
In a large skillet over medium to low heat, add 1 drizzle of olive oil.
Add the shrimp and sauté for 3 minutes.
After this time has passed, add the crushed garlic cloves, the salt, the chili flakes and stir for 2 minutes.
Add the sweet paprika and keep stirring until golden brown.
In another large skillet over medium to low heat, add 1 drizzle of vegetable oil and spread it with a brush.
Add the egg whites and keep stirring until everything has fried.
Next, add the rice we prepared earlier and stir for 3 minutes.
Add the green corn then add the cucumber, the carrot and the red onion all chopped into cubes and stir until incorporated.
Add the shrimp we fried earlier, chives to taste and stir one last time.
Serve.
