Potatoes
Start by cleaning the fish, removing all the fins, the head and the tail.
Open the fish, by making a slit from the belly to the tail.
Open it and season with salt to taste, black pepper, the lime juice and the olive oil, spread well.
Close the fish and add the same spices to its outside as well.
Let it rest for 30 minutes.
Cut the potatoes into small cubes and transfer them to a bowl. Season them with salt, black pepper, chimichurri and olive oil, mix well.
Transfer the potatoes to a baking sheet lined with parchment paper.
Take to a preheated oven at 220°C (428°F) and bake for 45 minutes.
Next, transfer the fish to another baking sheet lined with parchment paper, take to a preheated oven at 220°C (428°F) and bake for 35 minutes.
Serve.
