Rice
Start by cutting the chicken into dices and transfer them to a bowl, season with salt, sweet paprika, black pepper, also add the olive oil and the tomato paste, mix very well.
Into a skillet over medium-low heat, add a drizzle of olive oil and add the thinly sliced onions, stir until lightly browned.
Add a tablespoon of tomato paste and the water, mix again and let it cook for 5 minutes. Set aside.
Now, into another skillet, add a drizzle of olive oil and pour all the seasoned chicken, mix until lightly browned. Once you've done that, add the onions, mix again, close the skillet, and cook for 10 minutes.
After the indicated time, turn off the heat and set aside.
To make the rice, into a pan, add the rice and the olive oil, slightly cook and add the water and the salt, mix and let it cook for 10 minutes.
Meanwhile, into a skillet, add a drizzle of olive oil and the medium onion chopped into dices, sauté until lightly browned, add the carrot chopped into smaller strips, the red pepper chopped into dices, season with some salt, sweet paprika and black pepper, mix well.
After that, add the cooked rice and mix well again, add the cooked sweet corn and mix.
Serve with the chicken.
