Chop the peppers into dices.
Chop the garlic cloves into dices.
Also chop the red onion into dices.
Into a bowl, add all the diced peppers, all the red onion, parsley to taste, the diced garlic cloves, and season them with the salt, the oregano and the black pepper, mix all the ingredients very well.
Transfer all the ingredients to a nice jar.
Finally, fill the jar with extra virgin olive oil.
Close and let it rest for 24 hours.
Serve.
