To Finish
Start by cutting 500g of Chicken Breasts into fillets, then, using a mallet, pound these fillets to make them even more tender.
Over each fillet, add a pinch of salt, a pinch of black pepper, a pinch of sweet paprika and a pinch of oregano.
Rub all these spices by hand on each fillet and rub one against the other, so that both sides are fully coated in spices. Set aside.
Get the onion, cut it into strips and transfer to a large bowl. Then chop the tomato into dices and transfer to the bowl, also add 150g of grated cheese into this bowl.
Boil and grate 3 eggs, transfer to the bowl, put 2 crushed garlic cloves in the bowl, also add parsley and chives to taste, 1 level teaspoon of salt, a pinch of black pepper and the mayonnaise.
Now mix it all together very well and set aside.
Line a large baking sheet with parchment paper and brush a drizzle of oil all over it.
Transfer all the chicken fillets to the baking sheet, then cover each fillet with the mixture we've just made, gently spreading it over each fillet.
Finally, sprinkle each fillet with some mozzarella cheese to taste, but that's optional.
Bake in a preheated oven at 200°C (392°F) for 30 to 40 minutes, then serve.
