In a bowl, add the warm water and the tapioca starch, mix well until the starch fully dissolves.
Add the salt, the sweet paprika, the garlic powder and the egg, mix well. Set aside.
In a skillet, add 1 drizzle of olive oil and the round slices of bologna sausage, fry them until golden brown.
Next, in another skillet, add the unsalted margarine and stir until melted.
Add some of the mixture we made using a bottle with holes in the cap.
Spread it out in the skillet, forming a pancake batter.
Over the batter, add the beaten eggs, 1 slice of mozzarella cheese, 1 slice of the fried bologna sausage, 1 pinch of sweet paprika, 1 pinch of black pepper and close the pancake as shown in the video.
Finally, fit the pancake in a barbecue skewer split in half (halfway).
Roll up the pancake using the barbecue skewer.
Serve with the sauce of your choice.
