Start by cutting the carrots into thin strips and set aside.
Cut the chayotes in half and remove the core, also cut them into thin strips.
Also cut the onions into thin strips.
Now, in a saucepan filled with boiling water, add the carrot strips and let them cook for 15 minutes.
Also cook the chayote strips for 15 minutes.
Next, in a saucepan, add 1 drizzle of oil and the garlic cloves chopped into slices, stir until slightly golden brown.
After that, remove all the garlic and set aside.
In the same saucepan, add the onion strips and stir until they start to get translucent.
Add all the cooked carrot strips and stir for 1 minute.
Once you’ve done that, turn off the heat, add all the cooked chayote strips, season with the oregano, a drizzle of olive oil, half of the fried garlic, the salt, the lime juice and the black pepper, mix well.
Transfer all the vegetables to a nice serving dish and top them with the rest of the fried garlic.
Serve.
