Healthy Vegetable Soup

Cut the tomato and the potatoes into dices.Grate the carrot.Drain the oil from the tuna cans.In a saucepan, add a drizzle of olive oil and add the onion chopped into dices, let them cook.Add the grated carrot, stir for 3 minutes.Add the tomato dices and the yellow bell pepper chopped into small dices, stir well and let all the ingredients cook for another 2 minutes.Add the chopped potatoes and the rice, stir again.Now, add the salt, the black pepper, the basil, the bay leaves and the water, stir again and let it all cook for 25 minutes.After this indicated time, add all the tuna and the peas, let it all cook for another 10 minutes.Serve.

Ingredientes

  • 1 Tomato 
  • 4 Small Potatoes 
  • 1 Carrot 
  • 2 Cans of Tuna

  • 1 Yellow Bell Pepper 
  • 4 Tablespoons of White Rice 
  • 2 Teaspoons of Salt 
  • 1 Generous Pinch of Black Pepper 
  • 1 Teaspoon of Dried Basil 
  • 2 Bay Leaves 
  • 1 Liter of Water 
  • 100g of Fresh Peas

Modo de Fazer

Cut the tomato and the potatoes into dices.

Grate the carrot. 

Drain the oil from the tuna cans. 

In a saucepan, add a drizzle of olive oil and add the onion chopped into dices, let them cook.

Add the grated carrot, stir for 3 minutes. 

Add the tomato dices and the yellow bell pepper chopped into small dices, stir well and let all the ingredients cook for another 2 minutes. 

Add the chopped potatoes and the rice, stir again. 

Now, add the salt, the black pepper, the basil, the bay leaves and the water, stir again and let it all cook for 25 minutes. 

After this indicated time, add all the tuna and the peas, let it all cook for another 10 minutes. 

Serve.
