Start by removing the silver skin from the rack of pork ribs and set aside.
In a large baking tray, add the black pepper, the salt, the chili flakes, the smoked paprika, the brown sugar, the garlic powder, the sweet paprika and mix everything very well.
Now, place the ribs on this spice rub and spread it well until fully coated.
If necessary, sprinkle some water to help the seasoning adhere.
In a square container, add the barbecue sauce.
Add a peeled pineapple with the crown still attached, in a way that the barbecue sticks well to it.
If you prefer, you can add this sauce using a brush instead.
Transfer the pineapple to a plate and wrap the seasoned ribs around it.
Then, secure it with some wooden skewers and cut off the excess skewers.
Finally, wrap everything in plenty of aluminum foil and transfer to a baking tray.
Take to an oven preheated to 150° C (300° F) and roast for 3 and a half hours.
Make sure to roast at low temperature.
Serve.
