Start by cutting the onions into round slices.
Transfer them to a medium baking dish, covering the entire bottom and set aside.
In a medium bowl, add the slices of crustless bread, the milk and mix everything until dissolved.
Now, in a large bowl, add the ground beef, the bread we dissolved, the eggs and the crushed onion.
Season with the salt, a pinch of black pepper, the garlic powder, the chimichurri, the mustard, a drizzle of olive oil, parsley to taste and mix everything very well until combined.
Next, take a handful of this meat mixture and shape it into a ball.
Repeat this process with all the meat mixture.
Now, wrap each of these balls in a slice of bacon and transfer everything to the baking dish with the bed of onions.
Take it to a preheated oven at 180° C (350° F) and roast for 40 minutes.
Serve.
