Into a bowl, add the wheat flour and the yeast powder, mix well.
Add 150ml of warm water and mix until combined.
Cover the bowl with plastic wrap and let it rest for 30 minutes.
After this indicated time, add the refined sugar, the melted unsalted butter, the honey, the egg yolks, the panettone essence, gradually add some more wheat flour, the salt and the warm water, mix very well until a dough forms.
When you can no longer mix the dough with the spoon, knead it by hand.
Transfer the dough to the table to make this step easier.
Stretch out the dough and in its center, add the chocolate chips.
Close the dough, kneading it well.
Then split the dough into 2 equal-sized pieces.
Transfer them to 2 panettone paper molds, put them on a baking sheet and let them rise for 1 hour.
After this indicated time, make a cross-shaped slit on top of each one.
Top them with the unsalted butter and take to a preheated oven at 180°C (356°F), bake for 35 minutes.
Baking time may vary depending on the power of your oven.
