In a large bowl, add the boiled potatoes chopped into small cubes.
Next, with a potato masher, mash them thoroughly until they reach a smooth mashed potato consistency.
Add the grated mozzarella cheese, season with the salt, the black pepper, the dried parsley and mix everything well to combine.
Now, with your hands lightly greased with vegetable oil, take handfuls of the mashed potatoes and shape them into balls, then gently flatten them.
Then, transfer them to a skillet and set them aside.
In another skillet over medium to low heat, add a drizzle of olive oil.
Add the onion chopped into small cubes, the crushed garlic cloves, the bell peppers also chopped into small cubes and sauté everything.
Next, add two chicken breasts sliced into small cubes and stir until this chicken is lightly browned.
Season with the salt, the black pepper and the sweet paprika.
Add the tomato paste, mix to combine all the seasonings and set aside.
In a small bowl, add the tomato sauce, the water and mix to combine.
Now, on each potato patty, add 1 tablespoon of the chicken mixture we prepared earlier.
Next, pour the sauce we prepared between the patties and top each of them with the grated mozzarella cheese.
Take to a preheated oven at 180 ° C (350 ° F) and bake for 20 minutes.
Serve.
