Start by cutting the potatoes. Cut them in half then into smaller pieces.
In a large saucepan, add the potatoes then add enough water to cover them.
Turn the heat to medium and let them cook for 10 minutes.
Once the potatoes have cooked through, drain all the water and set aside.
Next, cut the onion into round slices. Separate all the layers, like shown in the video.
Transfer them to a medium bowl, add parsley to taste, one pinch of salt, one pinch of black pepper and the vinegar. Mix all the ingredients together very well until incorporated.
Now, in a medium baking dish, add the cooked potatoes, one drizzle of olive oil and one pinch of black pepper. Mix to incorporate.
Add the onion slices we’ve seasoned. Mix all the ingredients together very well once again.
Serve.
