Homemade Sausage

Start by cutting the beef into thin strips then slice them into small dices. Set aside.Do the same thing with the pork, cut into small dices.Also cut the chicken breasts into dices.Once you’ve done that, into a bowl, add the chicken, the beef and the pork dices.Season with the salt, the black pepper, the white pepper, add the diced garlic and the cold water, mix all the ingredients very well.Cover the bowl with plastic wrap and take it to the fridge, let it rest for at least 2 hours.After this indicated time, cut the top of a plastic bottle and fit a previously hydrated sausage skin on the neck of the bottle. Tie the sausage skin to the neck of the bottle using a thick string.Next, add 1/3 of the seasoned meat mixture into the bottle and push it into the sausage skin. Do this process slowly to prevent the skin from bursting.Once you’ve done that, tie the ends of the sausage skin, tying a knot on each side.Now into a saucepan filled with hot water over medium heat, add the bay leaves, the peppercorns, 1 teaspoon of salt and wait until the water starts to boil.Add the sausages and let them cook for 30 minutes.After this indicated time, remove the sausages from the water and set them aside.Into a skillet, add 1 generous drizzle of olive oil and add the sausages, fry them until both sides have turned golden brown.Serve.

  • 500g of any Beef Cut of Your Choice
  • 500g of any Pork Cut of Your Choice

  • 1 Tablespoon of Salt
  • ½ Teaspoon of White Pepper
  • ½ Teaspoon of Black Pepper
  • 150ml of Cold Water
  • 1 Plastic Bottle
  • Hydrated Sausage Skins
  • 3 Bay Leaves
  • Peppercorn to Taste

Modo de Fazer
