Topping
In a food processor, start by adding the cooked white rice, the shredded mozzarella cheese, the eggs, the water and blend everything very well until combined.
Season with the salt, the black pepper and blend again to combine.
Add a drizzle of olive oil onto a 25cm diameter pizza tray and spread it with a brush.
Add the mixture we prepared and spread it out.
Take it to a preheated oven at 180° C (350° F) and bake for 25 minutes.
In a large skillet over medium to low heat, add a drizzle of olive oil.
Add the onion chopped into small cubes, the green bell pepper also chopped into small cubes and sauté until lightly golden brown.
Next, add the diced chicken breast.
Season with the salt, the black pepper, the garlic powder and sauté until golden brown.
Add the tomato paste and stir to combine.
Once the crust has baked, top it with the diced chicken and cover with the shredded mozzarella cheese,
Place it in a preheated oven at 200° C (400° F) and bake for 10 minutes or until the cheese is melted and golden brown.
To finish, sprinkle grated Parmesan cheese over everything.
Serve.
