Start by grating the peeled beet using the large holes in the grater.
Chop the bunch of chives and set aside.
Finely chop the parsley.
Now, in a bowl, add the beet, the peas, the crushed garlic cloves, the chopped chives, the chopped parsley, the lime juice, the olive oil and the mustard – I used French grain mustard for this recipe, but you can use any other type of your choice.
Add the soy sauce and mix all the ingredients very well until incorporated.
Serve.
