Beetroot and Pea Salad

Start by grating the peeled beet using the large holes in the grater.Chop the bunch of chives and set aside.Finely chop the parsley.Now, in a bowl, add the beet, the peas, the crushed garlic cloves, the chopped chives, the chopped parsley, the lime juice, the olive oil and the mustard – I used French grain mustard for this recipe, but you can use any other type of your choice.Add the soy sauce and mix all the ingredients very well until incorporated.Serve.

  • 1 Beetroot
