Start by cutting the onion into cubes.
In a skillet, add one drizzle of oil and add the onion cubes, stir and let them fry until slightly golden brown.
Cut the red bell pepper into small cubes, then also cut the yellow pepper into small cubes, removing the core.
Cut the tomatoes into small cubes.
Transfer to the skillet the red bell pepper, the yellow pepper and the tomato cubes, add the tomato paste, the salt, the black pepper and the water, stir-fry all the ingredients for 5 minutes.
After this indicated time, add the instant noodles, breaking them into smaller pieces.
Add another 100ml of water, cover the skillet and let it all cook for 3 minutes.
After this indicated time, stir until incorporated into the sauce.
Add two beaten eggs and stir for another three minutes.
Finally, add the grated mozzarella cheese.
Cover the skillet and let it all cook for another three minutes.
Finish with parsley, to taste.
Serve.
