Chop the cabbage into thin strips and set aside.
Peel and grate the carrot.
Finely chop the chives and set aside.
Squeeze all the juice into a small bowl, passing it through a sieve to prevent the seeds from passing through.
Cut the apple into thin strips, removing the seeds and the core.
Now, in a large bowl, add all the cabbage, the carrot, the apple, the chives, the salt, the lemon juice, the olive oil and mix very well to incorporate the spices.
Serve.
