Steak with Wine Sauce

Start by seasoning the piece of beef with the salt and the black pepper on both sides, spread well.In a pressure cooker, add 1 drizzle of olive oil and add the beef, fry until all sides have been seared.After that, remove the beef and set aside.In the same pressure cooker, add the garlic cloves and the onion chopped into dices, stir-fry until golden brown.Add the chopped Cambuci peppers, parsley and chives to taste, the tomato chopped into dices, the bay leaf, stir-fry well.After that, put the beef back in the pressure cooker, add the water and 1 pinch of salt, cover the pressure cooker and once it reaches pressure, let it all cook for 40 minutes.After this indicated time, set the beef aside and pass the remaining sauce through a sieve.Next, in a saucepan, add the butter and the wheat flour, stir for 1 minute.Gradually add the dry red wine and keep stirring.Gradually add the sifted sauce and stir until combined.Add the mushrooms chopped into thin slices and stir for 10 minutes.After that, cut the beef into thick steaks and serve with the sauce and some roasted vegetables.

Ingredientes

  • 1 Piece of Beef (about 1.5kg) 
  • 1 Teaspoon of Salt 
  • 1 Pinch of Black Pepper 
  • 6 Crushed Garlic Cloves 
  • 1 Onion 
  • 4 Cambuci Peppers 
  • Parsley to Taste 
  • Chives to Taste 
  • 1 Chopped Tomato 
  • 1 Bay Leaf 
  • 1 Liter of Warm Water 
  • 1 Pinch of Salt

Sauce 

  • 2 Tablespoons of Unsalted Butter 
  • 2 Tablespoons of Wheat Flour 
  • 250ml of Dry Red Wine 
  • 200g of Button Mushrooms

After this indicated time, set the beef aside and pass the remaining sauce through a sieve.

Next, in a saucepan, add the butter and the wheat flour, stir for 1 minute. 

Gradually add the dry red wine and keep stirring. 

Gradually add the sifted sauce and stir until combined. 

Add the mushrooms chopped into thin slices and stir for 10 minutes. 

After that, cut the beef into thick steaks and serve with the sauce and some roasted vegetables.
