Sardines Marinated with Peppers

Start by adding the fresh, clean sardines to a skillet filled with boiling water.Add the red onion chopped into smaller pieces, the carrot sliced into rounds, the green bell pepper chopped into smaller pieces, the peeled garlic cloves and the lime sliced into thin rounds.Season everything with the salt, the onion powder, the black pepper, mix everything very well and let it all cook for 10 minutes.After this time has passed, remove all the sardines from the skillet and set them aside.After doing that, strain all the remaining broth and also set it aside.Now, to clean the sardines, remove all their heads, their tails and the excess scales from each one.Open the sardines in half, remove their entire backbone and cut them in half.After doing that, add half of the sardines to a container with a lid.Next, add the pepper mix, the rest of the sardines and add another layer of the pepper mix.Add the salt, the bay leaves and fill ⅔ of the container with the broth we set aside earlier.Finally, add olive oil until everything is fully covered.Close the container, mix to combine, place it in the refrigerator and let it marinate for 24 hours.Serve.
