Sauce
Start by cutting the potatoes into strips.
Transfer these potatoes to a medium bowl and add enough cold water to cover them.
Then mix by hand and let them soak for 20 minutes.
After this indicated time has passed and using a clean tablecloth, dry the potatoes.
Transfer the potatoes to a large bowl, add the eggs, the salt, the garlic powder, a pinch of black pepper, the oregano, the wheat flour, mix very well by hand then set aside.
In a small bowl, add the red onion chopped into very small cubes, the mayonnaise, the ketchup, the mustard, a pinch of black pepper, mix all the ingredients until combined then set aside.
In a large skillet over medium heat, add the vegetable oil and let it heat up.
Add the potatoes we prepared earlier and let them fry until slightly golden brown.
Finish by adding some chives to taste.
Serve with the sauce we made.
