Start by cutting 1 chicken breast in half, lengthwise, but not all the way through.
Then, fill it with 1 strip of mozzarella cheese, close the chicken, cover with plastic wrap and pound well.
Repeat this process with 2 more chicken breasts and set aside.
Then, grate the potatoes using the largest holes on the grater.
Transfer to a medium bowl, add the egg and mix until combined.
In a small bowl, add the wheat flour.
Now, in another small bowl, add the eggs, the salt, a pinch of black pepper and whisk everything very well.
Bread the chicken breasts we prepared - first, coat them in the wheat flour then dip them in the eggs.
On a cutting board, make a layer with the potato-egg mixture.
Top it with the breaded chicken and cover everything with the rest of the potato mixture.
In a large skillet over low heat, add a drizzle of vegetable oil.
Add the chicken we prepared and fry for 5 minutes on each side, or until golden brown.
Serve.
