Into a blender, add the boiled rice, the eggs, the oil, the coconut milk and the milk, blend all the ingredients until combined.
Once you’ve done that, add the refined sugar, the mozzarella cheese and the baking powder, blend all the ingredients again on low speed.
Grease a ring cake pan with plenty of butter, spread well. I’m using a 20cm diameter cake pan.
Pour all the batter into the cake pan.
Now take it to a preheated oven at 180°C (356°F) and let it bake for 50 minutes.
Serve.
