Start by chopping the cabbage into thin strips, transfer them to a bowl, season with the salt, the black pepper, mix well and let it all rest for 5 minutes.
Grate the carrot and cut the red onion into thin strips.
In the bowl with the cabbage, add all the grated carrot and the onion strips, mix.
Slice the bacon into thin strips and stir-fry them until golden brown in a skillet with no oil.
Transfer these fried bacon bits to the bowl, add the vinegar, the olive oil, mix all the ingredients together very well until incorporated.
Finally, add parsley to taste.
Serve.
