Start by cutting the chicken breast into small cubes and set aside.
Now, grate the potatoes with the largest holes on the grater and transfer them to a medium bowl.
Also add all the chicken cubes, the egg and the onion chopped into small cubes.
Season with the salt and a pinch of black pepper.
Add the wheat flour and mix everything very well until combined.
Next, cut the mozzarella cheese into cubes.
In a large skillet over medium to low heat, add enough vegetable oil to cover the bottom and let it heat up.
Add portions of the mixture we prepared, shaping them into fritters and top each of them with 1 of the cheese cubes we cut earlier.
Then, top the cheese with more of the mixture and fry until golden brown on both sides,
Turn them over occasionally to prevent the fritters from becoming soggy.
Remove them from the skillet and soak up the excess oil onto a plate lined with paper towels.
Serve.
