Cut the onion into small dices and set aside.
Cut the peeled carrot in half then cut into half-moons.
Chop the celery stalks into small dices.
Chop the red pepper into small dices, making sure to remove all the seeds. Repeat this process with the yellow pepper.
Chop the cabbage into smaller bits.
Grate the tomato.
After that, into a saucepan, add the oil and the onion dices, stir until slightly golden brown.
Add the carrot slices, the celery and stir for 1 minute.
After this indicated time, add the red and yellow peppers, stir until the ingredients start to wilt.
Add the cabbage and the warm water, partially cover the pan and let it all cook for 10 minutes.
After this indicated time, add the grated tomato, the tomato juice, the crushed garlic, salt and black pepper, stir all the ingredients very well.
Then cover the pan again and let it all cook for 20 minutes.
After this indicated time, turn off the heat and using a hand mixer, blend all the ingredients very well until a thick soup is formed.
Top with parsley to taste.
Serve.

This is very similar to the CSIRO soup diet recipe, eat as much of it as you want. instead of grated tomato and tomato juice, it was two cans of crushed or diced tomatoes, also two tins of beef consumè instead of water, and it wasn't blended.
