Start by adding the Tuscan sausages in a saucepan filled with boiling water and let them cook for 10 minutes.
After this indicated time, remove the sausages from the heat and cut a vertical slit down the center of each sausage, but don’t cut them all the way through.
Transfer them to a baking tin and set aside.
In a bowl, add the green bell pepper chopped into small cubes, the onion chopped into small cubes, the tomato chopped into small cubes, parsley to taste and the sugar-free plain yogurt, mix until combined.
Now, add this filling to the sausages we prepared.
Take to a preheated oven at 180°C (356°F) and bake for 30 minutes.
After this indicated time, remove the sausages from the oven and distribute the grated mozzarella cheese all over them.
Take them back to a preheated oven at 180°C (356°F) and let them bake for another 10 minutes.
Serve.
