Start by grating the carrot using the small holes in the grater.
In a skillet over medium-low heat, add one drizzle of olive oil, the grated carrot and one pinch of salt. Stir.
Cover the skillet and let it all cook for 5 minutes.
After this indicated time, remove from the heat, and set aside.
In a bowl, add the eggs, one pinch of black pepper and one pinch of salt. Mix until combined.
Next, add the sautéed carrot and mix until combined.
Now, in a skillet, add one drizzle of olive oil and spread it well.
Add the carrot mixture we made. Spread it evenly on the skillet.
Cover the skillet and let it all cook for 3 minutes.
After that, add the grated mozzarella cheese, cover the skillet again and let it all cook until the cheese has fully melted.
Finally, fold the pancake in half.
Serve.
