In a nice medium ovenproof dish, add the onions cut into slices.
Season them with the sweet paprika and the Italian seasoning.
Add the sun-dried tomatoes, a generous drizzle of olive oil and mix everything very well.
Next, add the garlic head with the top cut off and cover the dish with aluminum foil.
Take to a preheated oven at 180° C (350° F) and bake for 1 hour.
In a large saucepan over medium to low heat, add the water, the salt, the bow-tie pasta and let it cook for 10 minutes.
After this time has passed, drain all the water from the pasta and set aside.
Once the other ingredients have baked through, remove the foil from the dish and squeeze the garlic.
Add spinach leaves to taste chopped into strips, parsley to taste, the juice of half a lemon, the coconut milk and mix until combined.
Next, add the cooked pasta and mix again.
Serve.
