Bone-In Breaded Chicken Drumsticks

Start by peeling the potatoes and dicing them.Next, transfer to a saucepan, add enough water to fully cover them, add the salt, cover the pan and let them cook until tender.Once you’ve done that, drain all the water, transfer all the potatoes to a bowl and mash them well until they reach mashed potato consistency.Now, in another saucepan, add the chicken drumsticks, add enough water to fully cover them, add the bay leaves and the peppercorns, cover the pan and let them cook for 25 minutes.After this indicated time, remove all the skin from the drumsticks and all the meat from the bones and set the bones aside.Cut the chicken meat into smaller pieces and transfer them to a large bowl.Add the mashed potatoes, the grated mozzarella cheese, the black pepper and the salt, mix well until combined.Get a portion of this mixture and one bone, wrap the mixture around the bone, shaping it into a drumstick.Repeat this process with all the mixture.Now, bread the chicken drumsticks.Coat them in the wheat flour, then dip them in the beaten eggs and finally, coat them in the breadcrumbs.Repeat this process with all the chicken drumsticks.Next, fry them in hot oil until golden brown.Finally, remove them from the hot oil and drain the excess fat on a plate lined with paper towels.Serve.

  • 1kg of Chicken Drumsticks

  • 250g of Mozzarella Cheese 
  • 1 Generous Pinch of Black Pepper 
  • 1 Teaspoon of Salt 

For Breading 

  • Wheat flour 
  • Beaten Eggs 
  • Breadcrumbs
