In a skillet, put the oil or olive oil, add the tomatoes cut into about 1-finger thick round slices. To season, add to each slice dried parsley, curry powder and fry for about 2 minutes, flip them and fry the other side too.
Add the chopped peppers, we used red, yellow and green, however it is to taste, add the onion strips and half of the grated cheese.
In a bowl, whisk the eggs with a fork and add some salt.
Pour this beaten egg mixture into the skillet and cover it with the other half of grated mozzarella cheese.
Cook for about 5 to 7 minutes over very low heat to keep it from burning.
Flip it with a spatula and cook for another 2 minutes.
Serve.
