Start by grating the potatoes using the smaller holes in the grater.
After that, squeezed these grated potatoes to remove some of their water.
Then into a bowl, add the ground beef, the grated potatoes, the egg, the grated onion and the breadcrumbs.
Season with the salt, the sweet paprika, the black pepper and the chimichurri, mix it all together very well.
Once you’ve done that, get a portion of the meat, round it and flatten into a small cylinder.
Repeat this process until you’ve used up the whole meat mixture.
Into a skillet, add enough oil to cover the whole bottom, add the croquettes and fry them for 3 minutes.
After this time, flip the croquettes and fry the other side for 3 minutes as well.
Remove them from the skillet and drain them on a plate lined with paper towels.
Serve.
