Seasoning Mix
In a saucepan, add the salt, the peppercorns, the bay leaves, the onion peel, the water then add the piece of pork loin, cover the pan and let it all cook for 35 minutes over medium-low heat.
In a bowl, add the sweet paprika, the garlic powder, the salt, the black pepper, and the chimichurri, mix all the spices very well and set aside.
Once the meat has cooked through, remove it from the saucepan and transfer to a cutting board. Season the meat by spreading the seasoning mix we made all over it, and set aside.
Now, get the lid of an aluminum pan and tie some pieces of string to the outer part of this lid. Place the meat in the center of the inner part of the lid and tie it with the strings, just like shown in the video.
Once you’ve done that, in the aluminum saucepan, place some hot coals until they fully cover the bottom of the pan.
Then fit the lid with the meat tied to it and let it smoke for 30 minutes.
Serve.
