Start by covering the bottom of a pressure cooker with the onions chopped into round slices.
Add only 1.5kg of the sliced ribs over the onions.
Add the Calabrese sausage, the Tuscan sausage, the peeled and sliced cassava.
Also add the round slices of red, green and yellow bell pepper, the salt, the chimichurri, add another 500g of sliced ribs all over it, add the tomatoes chopped into round slices, chives and parsley to taste and the water.
Cover the cooker and let it all cook for 30 minutes after picking up pressure.
After this indicated time, release the pressure and check if the ribs are already tender. If not, you can let them cook in the pressure for a few more minutes.
Transfer all to a serving dish and serve.
