In a bowl place the chicken drumsticks, the salt, saffron, paprika, black pepper, garlic and squeeze the lime, mix it all together very well. Add the mayonnaise, the eggs and the corn starch, mix very well again.
Into a baking tin, add the olive oil and spread it out evenly, add the onion cut into round slices and the chicken.
Cut the potatoes into round slices and add them to the chicken sauce that was left in the bowl, then mix.
Cover the chicken with these potatoes and pour the rest of the sauce all over it.
Cover the baking tin with aluminum foil and bake in a preheated oven at 200°C (392°F) for 60 minutes with the foil. After this indicated time, remove the foil and bake for another 30 minutes.
Serve.
