Start by adding a drizzle of vegetable oil to a large skillet over medium to low heat and spread it evenly using a brush.
Add a round-shaped piece of fresh bread dough and spread it out well.
Next, add the egg yolks to the center of the dough.
Fold the dough by bringing the edges together and let it fry for 1 minute.
After this time has passed, flip the dough and press it firmly in the skillet so the yolks spill out and spread around the dough.
Let it fry for another 2 minutes, remove the fried bread from the skillet and set aside.
Next, in the center of the skillet, add the ripe tomato chopped into small cubes.
Season with the salt and the black pepper.
Add the grated Parmesan cheese, the shredded mozzarella cheese and mix everything very well to combine.
Remove from the skillet and set aside.
In the same skillet, add the slices of bacon and fry them until golden brown.
To assemble the recipe, add the scrambled egg yolks on top of the fried bread and finish with the slices of bacon.
Serve.
