Start by chopping the peeled potatoes into dices and transfer them to a saucepan, add enough water to cover them.
Let the potatoes boil over high heat for 10 minutes.
After this indicated time, turn off the heat and drain the water.
Transfer the potatoes to a large bowl and using a potato masher, mash them very well into a potato mash.
Season the mashed potatoes with the salt, the sweet paprika, the black paper and with some parsley to taste, mix all the ingredients very well.
Now add the shredded parmesan cheese and the corn starch, mix it all together very well again.
Once you’ve done that, split the potato mixture into 5 equal pieces.
Get one of these pieces and roll it up on a table into a log shape.
With a fork, press down on the surface of the potato mixture then slice it to the size of the fork markings.
Repeat this process until you’ve used up the whole potato mixture.
Into a skillet, add enough oil to cover its bottom and add the potato slices, let them fry for 2 minutes each side or until golden brown.
Drain the excess oil on paper towels.
Serve with your favorite sauce.
