Start by adding the wheat tortillas to a large skillet over medium heat filled with hot water and cook them for 5 minutes.
After this time has passed, remove them from the water and transfer them to a blender.

In a large skillet over low heat, add a drizzle of olive oil and spread it with a brush.

Cover the skillet and let it cook for 3 minutes.

Add the shredded mozzarella cheese, the red onion cut into strips, the green bell pepper chopped into small cubes and the smoked sausage cut into rounds.
Cover the skillet and let everything cook for another 5 minutes.
