Start by slicing the salmon into 4 fillets on a chopping board. Season them with salt and black pepper, rub spices well and set aside.
Now add enough olive oil into a skillet to cover its bottom and add the salmon fillets. Sear for 2-3 minutes.
Flip each fillet to sear the other side as well. Once that’s done, set aside.
Chop the red onion into dices, cut the lemon into round slices and chop the spinach leaves into small thin strips.
Next, into a skillet, add the olive oil and the unsalted butter or margarine, add the chopped onion and stir very well until golden brown.
Add the garlic cloves and let them brown.
Add the white wine and mix well, add the table cream and mix again.
Add the Parmesan cheese and season with ½ teaspoon of salt and a pinch of black pepper, mix again.
Add spinach leaves and mix. Add the lemon slices and mix lightly so that the sauce is well combined.
Add the salmon fillets and pour the sauce over the salmon.
Close the skillet and let it all cook for about 15 minutes over low heat.
Serve.
