Rice
Start by putting the pork loin on a cutting board and pierce it several times with the tip of a knife, transfer it to a medium baking dish and set aside.
In a small bowl, add the soy sauce, the honey, the mustard, the black pepper, the sweet paprika, the chimichurri and mix until combined.
Next, pour this sauce all over the meat and spread it very well.
Cover it with plastic wrap, take it to the fridge and let it marinate for 12 hours.
After this time has passed, in a large baking tray, add the rice, the red peppers chopped into small cubes, the heavy cream, the chicken broth, a pinch of salt, a pinch of black pepper and set aside.
Next, transfer the marinated loin to a cutting board topped with 6 strings.
Place the oven rack over the loin and tie it to this rack using the strings, like shown in the video.
Take it to a preheated oven at 160° C (320° F) along with the rice we prepared and let it all bake for 2 hours.
Serve.
