
In a skillet over medium-low heat, add one drizzle of olive oil, add the rice and stir.
Add the water, stir, cover the skillet and let it cook until the water begins to boil.
When that happens, add the salt, stir and let it cook for another 7 minutes.
Next, in a bowl, add the eggs and separate the yolks from the egg whites.
Add ½ teaspoon of salt in the bowl with the egg whites and beat until foamy.
Beat the yolks until dissolved.
Once the rice has cooked through, add the yolks and stir very well until combined.
Add the beaten egg whites and stir well again.
Stir for 5 minutes.
Serve.
