Start by grating the potatoes and transfer them to a bowl filled with cold water.
Once you’ve done that, get portions of potato and squeeze them to remove all the water, transfer to a dry bowl and set aside.
Into a large skillet, add a drizzle of olive oil and add the diced red onion, let it brown. Turn off the heat and set aside.
Now, grate the fresh parmesan cheese, if you prefer, you can use a packet of store-bought grated parmesan instead.
Then pour all the onion over the potatoes, add the eggs, the grated parmesan cheese, and the salt, mix very well.
Into a baking dish, add a drizzle of olive oil and evenly spread all over it. Then pour all the potato mixture and spread, in order to make it flat.
Next, split this mixture into 6 equal-sized slices.
Bake in a preheated oven at 180°C (356°F) for 45 minutes, baking time may vary depending on the power of your oven.
Serve.
