In a saucepan, add the potatoes sliced into cubes, add enough water to cover them and let them cook for 20 minutes.
After this indicated time, drain all the water, transfer the potatoes to a large bowl and mash them well until smooth.
Add the eggs, the onion chopped into cubes, parsley to taste and the salt, mix all the ingredients together very well until combined.
Add the slices of ham chopped into squares, the grated cheese and mix until incorporated.
Now, get a portion of this mixture in your hands, shape it into a ball and gently press flat.
Repeat this process until you’ve used up all the mixture.
In a large skillet over medium-low heat, add enough vegetable oil to cover its bottom, add the potato balls and fry on both sides until golden brown.
Soak up the excess oil on a plate lined with paper towels.
Serve.
