For Coating
In a bowl, place the mashed bananas and the sugar, mix very well. Add the oil, the egg and the salt, mix. Add the fine oatmeal and mix well. Gradually add the wheat flour and keep mixing.
Once you've added all the wheat flour, add the baking powder.
When the dough starts to get firmer, add more flour and mix by hand.
Place the dough on a flat surface and knead for about 5 minutes.
Get a piece of dough, roll it into a log shape, braid the dough and coat it in the demerara sugar or you can use regular sugar with cinnamon powder. Repeat this process until you've used up all the dough.
Grease a baking tin with butter and flour and bake the cookies at 180°C (356°F) for 30 to 40 minutes. Serve.
