Meat and Potato Pie

Into a skillet, start by adding a drizzle of olive oil, add the red onion chopped into dices, mix well until golden brown.Add the tomatoes chopped into larger dices and stir until they start to break down.Add the ground beef, season with salt and chimichurri, mix very well and let it cook for about 5 minutes. Set aside.Into a skillet over medium heat, add enough oil to cover its bottom and place the medium potatoes cut into dices. Fry them for about 5 minutes or until golden brown.Drain them on paper towels.Into a bowl, add the eggs and season them with salt and black pepper, mix very well until combined. Add chives to taste and mix. After that, set aside.Grease a large baking dish with a drizzle of olive oil, evenly spread it and add the breadcrumbs. Sprinkle breadcrumbs all over the baking dish, covering its whole bottom.Add half of the potatoes we’ve fried, add half of the egg mixture and 150g of mozzarella cheese. Add all the meat we’ve prepared, spreading it very well.Add the other half of the cheese, the rest of the potatoes and the remaining egg mixture.Now, bake in a preheated oven at 180°C (356°F) for about 30 minutes. Baking time may vary depending on the power of your oven.Help yourself.

  • 1 Teaspoon Chimichurri
  • 6 Medium Potatoes
  • Breadcrumbs
  • 300g of Mozzarella Cheese

Egg Mixture

  • 4 Eggs
  • Generous Pinch of Black Pepper
  • ½ Teaspoon of Salt
  • Chives to Taste
